Scrumptious Apple Rum Pork Chops

Apple Rum Pork Chops (p. 227)

Serves 4

Ingredients

  • 4 2” center loins well trimmed boneless pork chops
  • 6 tablespoons sweet butter
  • 2 Granny Smith cored and peeled apples, cut into ½” rounds
  • ½ teaspoon ground cinnamon
  • 1 tablespoon sugar
  • ¼ cup dark rum
  • salt and pepper

Directions

Sprinkle chops with salt and pepper

In a large oven proof skillet, brown chops in half of the butter on both sides and transfer to a platter.

Add remainder of butter to pan and add the apple rings. Sauté the apples for 3 minutes on each side then sprinkle them with cinnamon.

Return the chops to the pan placing them carefully on the apple rings. Combine the sugar and rum and pour the mixture over the chops.

Cover the skillet with foil and place in a 350 degree oven and bake for 50 minutes.

Carefully transfer the apples and chops to serving plates or a platter and pour the juices on top of each serving.
