Delicious Layered Cobb Salad

Junior League of Annapolis wishes everyone a Happy New Year! Now that we’ve enjoyed endless holiday eating and celebrating, it’s time to reflect on the year ahead and consider some New Years Resolutions. Here’s to being healthier in 2016! We can strive for better health with exercise and improved eating habits.

Layered Cobb Salad (p.96)

Serves 4 to 6

Ingredients

  • 6 slices applewood smoked bacon
  • 1 (12-ounce) package Bibb lettuce
  • 2 yellow bell peppers
  • 4 ounces provolone cheese, sliced
  • 4 ounces roasted turkey, sliced
  • 2 tomatoes, sliced
  • 1 cup blue cheese vinaigrette

Directions

Cook the bacon in a skillet until crisp; drain and crumble. Tear the lettuce into bite-size pieces. Cut the bell peppers into bite-size pieces. Layer the lettuce, cheese, turkey, tomatoes, bell peppers and bacon in a large salad bowl. Pour the vinaigrette over the top just before serving. Feel free to substitute the turkey for some fresh roasted chicken or shrimp!
